Description

1º) Wedge of semi-cured Manchego cheese (4 months maturing / approx. 250 g), crafted exclusively for Bronze & Mora by 1605. A true gem, awarded the Silver Medal in several editions of the World Cheese Awards. Features: Nose: clean animal aroma. Lactic notes reminiscent of mild yoghurt and a fruity character with subtle hints of nuts. | Palate: semi-firm texture, good creaminess and solubility with medium crumbliness. Pleasant oily-mouthfeel and floury granularity. Initially mild acidity mingling with sweet cereal notes. Well-integrated animal aromas and a long-lasting aftertaste of raw nuts (almond).

2º) Sliced 100% acorn-fed Ibérico loin Joselito – Guijuelo (80 g).

• Optional: Sliced 100% acorn-fed Ibérico loin 5 Jotas – Jabugo (80 g).

3º) Bottle of extra virgin olive oil – Arbosana / Hojiblanca / Pajarera, depending on availability. (250 ml)

4º) Small bag of gourmet breadsticks from Utrera.

5º) Optional: you can add a bottle of Viñamayor Roble red wine from Ribera del Duero (benjamín / 375 ml.), a young, fresh and modern wine. Features: Colour: intense ruby with bluish highlights | Nose: aromas of red and black fruits intertwined with subtle toasted notes from oak ageing. | Palate: juicy and fresh, light on the palate but with a tasty finish. For Manchego Cheese Lovers

Take the acorn-fed Ibérico loin out of the fridge in advance and let it rest at room temperature outside its packaging for about 45 minutes before serving. Do the same with the Manchego cheese: tempering it outside the fridge and out of its wrap is essential to enjoy its full flavour. You can slightly warm a plate in the microwave to gently melt the fat in the loin. Another great idea is to drizzle a bit of extra virgin olive oil over both the loin and the cheese. Its extraordinary fruitiness will boost the flavour of both delicacies.
