Malasaña S – Craft Beer, Ibérico Ham, Olive Oil & Manchego Cheese

Description

1º) High-fermentation ‘Blond’ beer Pale / Blond ale (330 ml.) Cibeles. Light and refreshing, ‘Rubia’ has floral aromas and a subtle citrusy aftertaste. Brewed with different varieties of hops, especially from León. Very well-balanced.

2º) Bottle of extra virgin olive oil – picual / hojiblanca / pajarera, depending on availability. (250 ml.)

3º) Sliced 100% acorn-fed Iberian shoulder ham Joselito (80 g).

• Heads up! Optional: sliced 100% acorn-fed Iberian shoulder ham (80 g) Cinco Jotas.

4º) Wedge of semi-cured Manchego cheese 1605 for Bronze & Mora (250 g), awarded with silver medals in several editions of the World Cheese Awards. Characteristics: Colour; Pale yellow rind with firm consistency. The inside is ivory white with small eyes and a lactic-acidic aroma. | Nose; Notes of dry grass and toasted pistachios. | Palate; almost no elasticity, a creamy sensation reminiscent of clotted cream and chickling flour.

Malasaña-style tapas at home

First thing’s first: chill the craft beer. No more than 6 degrees. Try wetting the glass with very cold water before pouring. Tilt it at a 45º angle and fill up to three-quarters full, leaving the final quarter upright to allow a nice foam to form. The Iberian ham slices should be at room temperature. Best served after breathing outside the vacuum pack for about 45 minutes. Same goes for the Manchego cheese. And the cherry on top? Slice a good tomato, add coarse salt and our olive oil.
