1) Sliced 100% acorn-fed Ibérico shoulder ham by Joselito (80 g).

Optional: Sliced 100% acorn-fed Ibérico shoulder ham (80 g) by Cinco Jotas.

2) Sliced 100% acorn-fed Ibérico loin by Joselito (80 g).

Optional: Sliced 100% acorn-fed Ibérico loin (80 g) by Cinco Jotas.

3) Wedge of semi-cured Manchego cheese (4 months maturing / approx. 250 g), crafted exclusively for Bronze & Mora by 1605. A true gem, awarded the Silver Medal in several editions of the World Cheese Awards. Features: Nose: clean animal aroma. Lactic notes reminiscent of mild yoghurt and a fruity character with subtle hints of nuts. | Palate: semi-firm texture, good creaminess and solubility with medium crumbliness. Pleasant oily-mouthfeel and floury granularity. Initially mild acidity mingling with sweet cereal notes. Well-integrated animal aromas and a long-lasting aftertaste of raw nuts (almond).

100% Acorn-Fed Ibérico Ham and Loin

We can’t stress this enough: acorn-fed Ibérico ham and loin must be enjoyed at room temperature. Ideally, let them breathe outside of their vacuum packaging for about 45 minutes before consumption. The same goes for the Manchego cheese: take it out of the fridge and remove the plastic so it can soften slightly. You can even warm a plate briefly in the microwave to gently melt the fat in the Ibérico products, enhancing their flavour. Oh, and don’t forget to drizzle a generous splash of extra virgin olive oil over the white asparagus!
